Plant-based on the menu, dish by dish
The menu makes room for seasonal vegetables: butternut velouté with chestnut shavings, seasonal mushroom risotto, dishes built around market vegetables and fresh herbs. All plates that can be adapted in a vegan version, without any animal produce — the risotto, for instance, is served without cheese —, simply by mentioning it when ordering.
Our logic is product first: a fine market vegetable, cooked honestly, beats any industrial substitute. We'd rather offer you a sincere plant-based plate — seasonal, of the terroir — than tick a box with a soulless dish. That, too, is the bouchon spirit.
