Eating vegetarian in Vieux-Lyon, at the heart of the bouchon
The bouchon is thought reserved for charcuterie and offal. Aux Trois Maries proves otherwise: vegetarian, vegan and gluten-free options, made in-house, served on rue des Trois-Maries without abandoning the Lyonnaise spirit.

The myth to correct
Can a bouchon be vegetarian?
The Lyonnaise bouchon carries a meaty reputation: pork, quenelles, andouillette. It isn't wrong, but it's incomplete. Lyon's terroir cooking also holds a deep plant-based tradition, born of the weavers' frugal mâchons and the growers' gardens along the Saône quay.
Aux Trois Maries, born in the middle of the last century, chose an open table: alongside the traditional specialities, a genuine meat-free offer — designed, not tucked at the bottom of the menu. Here you eat vegetarian as you eat Lyonnaise: with good produce and the care of a house that truly hosts.
On the plate
Our vegetarian specialities
A serious vegetarian restaurant is judged by its choice, starter included. Here are the meat-free dishes you'll find on our seasonal menu, made in-house, in the Lyonnaise spirit.

The address
A veg-friendly table on rue des Trois-Maries
Our house occupies one of the oldest addresses in Vieux-Lyon, where the 'café des primeurs' once stood, facing the Saône quay market. That bond with the market, with seasonal vegetables and growers, is exactly what our vegetarian cooking carries forward today.
The street itself owes its name, given in the 17th century, to the three Marys of the Gospel: Marie-Salomé, Marie-Jacobée and Marie-Madeleine. Steps from Saint-Jean cathedral and the Vieux-Lyon metro station, it's an easy-to-find neighbourhood address, right in the UNESCO-listed Renaissance quarter.

Veg, vegan & gluten-free
Flagging it means eating well
Vegetarian, vegan or gluten-free: flag it when booking, and the kitchen adapts its sides and garnishes. It's the surest way to guarantee real choice rather than a single fallback dish. Here, openness isn't a signboard: it's a way of welcoming everyone to the same table, with the same care.
The right instinct
Choosing a veg-friendly table in the quarter
Vieux-Lyon holds one of the highest restaurant densities in France, but not every address takes vegetarian dining seriously. A few simple markers spare you the eternal listless salad tucked at the bottom of the menu.
Look for a menu where the plant-based exists at every stage — starter, main, dessert — and where produce is named: seasonal mushroom risotto, affineur cheeses, seasonal vegetables. A house that names its producers and follows the seasons almost always has what it takes to build a fine meat-free meal.
Finally, trust the conversation. A service that advises you, offers to adapt a dish or drop the gluten without sighing is the best of signs. That's exactly the spirit we cultivate on rue des Trois-Maries: Lyonnaise tradition, yes, but welcoming and without dogma.
Notre sélection s'étend au-delà du végétarien — et pour les repas végétaliens, une page dédiée détaille nos choix. Retrouvez aussi les plats sans gluten sur notre menu de saison.

Frequently asked
Eating vegetarian in Lyon: your questions
Can you eat vegetarian in a Lyonnaise bouchon?
Yes, increasingly so. Aux Trois Maries offers a genuine meat-free selection — cervelle de canut, butternut velouté, seasonal mushroom risotto (vegan on request, without cheese), egg mayonnaise — alongside the traditional specialities.
Do you offer vegan and gluten-free dishes?
Yes. Vegan and gluten-free options feature on our seasonal menu. The safest is to flag it when booking: the kitchen then adapts its sides and advises you at service.
Where can you find a vegetarian restaurant in Vieux-Lyon?
Aux Trois Maries is at 1 rue des Trois-Maries, in Vieux-Lyon (Lyon 5th), a few steps from Saint-Jean cathedral and the Vieux-Lyon metro station. You can eat vegetarian at the heart of the Renaissance quarter.
Which Lyonnaise specialities are naturally vegetarian?
Cervelle de canut, that herbed fresh cheese, is the most emblematic. Add to it butternut velouté, seasonal mushroom risotto (served vegan, without cheese) and many house-made desserts, all vegetarian.
Do you need to book to eat vegetarian here?
Booking is strongly advised, especially at weekends and in high tourist season. It's also the moment to state a vegetarian, vegan or gluten-free diet so the kitchen can organise ahead.
Are the desserts house-made and vegetarian?
Yes, all our desserts are made in-house and vegetarian: pink-praline tart, vanilla crème brûlée, brioche French toast and dark-chocolate fondant, among others.
